This week there are two things to celebrate, Pancake Day, also known as Shrove Tuesday, and Valentine’s Day.

Fluffy pancakes

First let’s talk about pancakes. The eating of pancakes on Shrove Tuesday originated in the 16th Century. The reason for this is that during Lent, Christians were discouraged from eating things like eggs and butter. So, the perfect solution was to make pancakes. But how do you make the perfect pancake? 

The first step is to make sure your batter is smooth. You can even use a liquidiser to make sure there are absolutely no lumps. Let the batter sit for 15 to 30 minutes before use, this allows any remaining air bubbles to dissipate. The heat of the pan is also important, it should be really hot. If you prefer a thin and crispy pancake, keep it at this temperature. If you prefer a softer pancake, turn it down to a moderate heat before introducing the batter.

Make sure to add enough oil or butter to cover the cooking surface of the pan. Pay especially close attention to this if your pan is not non-stick. Ladle in the batter and tilt the pan to ensure you have an even layer. Leave the pancake to cook for 30 seconds uninterrupted. If you’re feeling confident you can try flipping the pancake. However, you can just use a pallete knife to turn it over if you prefer. Leave it to cook for another 30 seconds before sliding it onto a plate.

The great thing about pancakes is that you can fill them with whatever you like. If you like sweet, you can go with the old favourite lemon juice and sugar. You could also try lime juice with brown sugar for a twist on a classic. If savoury is what you prefer you could try spinach and ricotta. If you like to mix savoury and sweet you could try bacon and banana. Sounds strange but don’t knock it until you’ve tried it. Saint Valentine but since the 14th Century, it has been associated with romantic love. By the 18th Century, it had become an occasion where lovers would express their feelings for each other with gifts. These would often take the form of letters, flowers and confectionery. This tradition has continued and is now celebrated by people of different cultures the world over.

150g frozen raspberries
2 tsp agave syrup or honey
50 ml oat or rice milk
1 tsp rose water
3 basil leaves
100 ml Magnesium Mineralized Water

Healthy smoothies and fluffy pancakes for Valentine's Day 2018

Put the frozen raspberries in the blender and add the oat or rice milk and Magnesium Mineralized Water. Blend until smooth. Add the agave syrup or honey and the rose water and blend briefly. Pour into a glass, garnish with basil leaves and serve.
